Corn flake chicken

I've been sick for the last couple of weeks and feeling a lot better now. So I wanted a nice home cooked meal as a pick me up for how I've been feeling. I had some corn flakes that needed to be used up and wanted chicken for dinner.

4 pieces of chicken (thigh, leg, breast)
1 egg
2 cups Corn flakes
oil
butter
milk
dash seasoning salt
3 red potatoes

Preheat the oven to 390 F. I thawed 4 pieces of chicken legs, dipped them into the beaten egg, rolled them in the crushed corn flakes and placed them on a cookie sheet. When they were all coated I sprinkled them with seasoning salt and drizzled oil over the corn flakes so they can brown, not burn. Put them in the oven for 40-50 min. While they were cooking I started to boil 3 (med sized) red potatoes. That way when your chicken is done the potatoes will be done at the same time. Take out the chicken first so they have time to rest and while they are resting strain and mash the potatoes with a glob of butter and some milk. I also had a salad to go on the side.

It was good but the only thing I would change is how to coat the corn flakes so they are not as soggy. Maybe instead of drizzling oil over I would spray them with pam or something light. But Overall it turned out great and it didn't take that much time to prepare. I would most definitely make this dish again.

Starting

So this is my first time ever making a blog so bare with me as I'm new to this. I was watching Julie and Julia and thought "hey thats a goos idea" and I wanted to do something similar. But not really. So I'm going to try and take as many recipes from different cook books, from appetizers to dinners to desserts and put them to the test to see how difficult, how fast, and if they are good.

I am a mother of a 4 month old boy, Patrick, and love to cook and bake. For all those new mothers who have absolutely no time and need a fast, but good dinner to prepare, hopefully this will help out. And if not well at least I tried. And if anyone has any ideas or tips please let me know cause I am also learning myself. I love to read comments so please comment if you like or dislike anything, or just let me know how the recipe turned out.

I will be testing out 3 or more different recipes during the week. I will be writing down the grocery list, how long it takes to prepare, how long it takes to cook, giving 1-5 star rating (1being the lowest) and I will go from there. Well I guess
